A higher mash temperature will select the α-amylase and produce a wort with more dextrins. Picking a temperature for your beer will help determine the final body. That should ferment out to around 7.5 ABV I am hoping that the high mash-out temp will lower the viscosity (although that might be too high and do the oposit ) It should, all so, lessen the bateria in the wash.
